Why Your Oven Temperature is Lying to You

The Parchment Paper “Map” You can “map” your oven’s heat patterns using a simple sheet of parchment paper. Preheat your oven to 350°F. Place a sheet of white parchment paper on a baking tray and slide it into the middle rack. Wait about 10–15 minutes. When you pull it out, the areas that turned dark brown first represent your oven’s hot spots. Now you know exactly where not to place your delicate cakes!
